Crafting Kitchen Magic with Stacey Schaffer

Please join Stacey Schaffer in the creation of a Soul Food meal in honor of Black History Month. Soul food has many definitions and interpretations but is typically defined as southern African American cuisine. It is immigrant fusion cuisine from West Africa, Western Europe, and the Americas. The staple of this cuisine is cornmeal, greens, animal protein, and beans. Soul food carries with it a rich history and whenever I cook it, I cook from my heart honoring the shoulders I stand upon who came before me. During the Transatlantic Slave Trade, slaves were given inadequate rations and forced to use ALL of what they were given - the true definition of whole foods cooking - everything from pig and chicken feet to chitterlings, utilizing the entire animal to feed their families and provide them with necessary nutrients and fat sources. While we won't be using these ingredients during our time together, getting the most out of our ingredients is quite valuable and will be discussed during the class. We will be making a Soul Food Power Bowl with black-eyed peas, collard greens, yellow rice, okra, and sweet potatoes. The perfect meal for a cold winter day!
